White butter beans (also commonly known as large lima beans or simply butter beans) are a variety of the legume Phaseolus lunatus. They are one of the larger types of white beans, with a distinctive creamy, buttery texture and mild, slightly sweet, nutty flavor that gives them their "butter" name—especially when cooked, they become soft, velvety, and almost melt-in-your-mouth.
